The zucchini craze has begun at my house!  My zucchini plant know has zucchini.  In the past few days, I know have 4 zucchini sitting on my counter waiting to have something done with them.  The other day one of my good blogging friends , Jamie from Jamie Cooks It Up, posted one of her favorite zucchini recipe so I had to give it a try.  It is simple and easy plus so tasty.

Zucchuni crisps: - 1lb zucchini -1/4 cup panko bread crumbs -1/4 cup grated parmesan -1 tbsp olive oil -1/4 tsp salt  Toss sliced zucchini in olive oil to coat.  Toss in breadcrumb/cheese;salt mixture to coat.  Place rin foil on baking sheet and spray with cooking spray.  Place single layer of sliced, coated zucchuni on baking sheet.  Sprinkle wirh remaining breadcrumb/cheese.  Bake at 400*F for 22-25 minutes

Use almond flour in place of bread crumbs . They're called zucchini bites. They are the healthy version of tater tots. The recipe for these couldn't be any easier.
