Dukkah  is a crumbly mixture of nuts, herbs, and seeds. Although its origin is Egyptian, we first encountered it in South Australia, at a riotous lunch hosted at St. Hallets winery. It was laid out in a dish in the middle of the table, and our Australian hosts instructed us to dip our bread into olive oil (also in a small dish on the table), and then into the dukkah.

手順 ■ケーキ 1)オーブンを約170℃に余熱 2)ボウルに薄力粉、ベーキングパウダー、重曹、塩をふるいにかけながら入れていく 3)別のボウルにミキサーで砂糖、卵、レモンジュースをよく混ぜる。混ぜながら溶かしバターを入れる 4)そこにサワークリームとバニラエッセンンスを加える 5)4に2を1/3ずつ加えていき、ヘラでかき混ぜていく 6)ケーキ型に流し込み、余熱していたオーブンで20分間焼く 7)温度を160℃に下げてつまようじがスッと通るようになるまでかあるいは30〜35分焼く 8)オーブンから取り出し、15分間冷ます  ■レモンシロップ 1)砂糖とレモンジュースを小鍋にいれ、砂糖が完全に溶けるまで煮る 2)溶けきったら火からよけて冷ます 3)シロップをはけでケーキに塗り、中まで浸透するほどたっぷり塗っていく  ■レモングレーズ 1)粉砂糖とレモンジュースを混ぜる 2)グレーズが固いと感じたらレモンジュースを足していく 3)ケーキにかける
