Baked Eggplant Parmesan - made it tonight for dinner and it was wonderful. Awesome that it's not fried! I use sliced fresh mozzarella and far less. Makes it more about the crispy eggplant. Freezes beautifully - before final bake after assembly.
Bake instead of deep-fry breaded eggplant - then layer with sauce, cheese and bake. Btw, epsom = good for eggplants and tomatoes
