Blueberry Ricotta Coffee Cake: I'm not going to claim this is healthy, but it is worth noting there is only 1/4 cup (4 Tbs.) of butter, and no other fat (ok, some low fat milk, but that's negligible) except for the ricotta cheese (which can be low fat); you could also use (reduced fat) cream cheese in place of the ricotta.
