Zucchini Latkes... great way to get some veggies & protein (could substitute almond or other flour too) & add other veggies... Update: I made these and even cooked them longer than the recipe said. Still came out a little mushy, so I guess you have to really squeeze out as much water as possible. I also added a little parmesan cheese in the mix or on top. Still have to work out the kinks to get the kid to like them. She wasn't fooled that these weren't pancakes, lol.
