Las lentejas son una gran fuente de proteina, con la ventaja de que su contenido de grasa es muy bajo. Contienen calcio y son eficaces para evitar el colesterol malo. Regulan la insulina, debido a que las leguminosas producen un bajo nivel de azúcar en la sangre y esto obliga al organismo a producir menos insulina.  Tambien contribuyen en la prevención del cáncer, ya que favorecen la digestión (siendo efectivas contra el estreñimiento), lo que previene el cáncer de colon.
