Pacific White Seabass. (Not actually a bass, but part of the croaker family). Average weight of the fish is about 20 lbs (the largest ever caught was 93 lbs). It may possibly be one of the tastiest fish. The flesh is white, firm, and mildly sweet. Not "fishy" tasting. It can be eaten raw (sashimi) or cooked in any fish recipe. Its carcass makes a great fish stock or soup.
