I tried a half batch for a small plum yummy galette. I loved the addition of the thyme to the plums. But the dough did that funny thing that cookie dough sometimes does when you should refrigerate it before baking. I may have rolled the dough too thin or added too much water. The problem might also be solved by refrigerating the dough for longer. In any event, I loved this galette! The crust was flavorful and light. It was delicious served with whipped coconut cream.
