My doctor put me on a ketogenic diet to help with my energy levels (since I have narcolepsy) + I'm a vegan = vegan keto experiment.
Update: I've been on a vegan ketogenic diet for over a year and it has done amazing things for my energy/endurance. No more energy crashes. Although it was a transition at first, I couldn't imagine eating any other way now.

My newest addiction at the moment are these cucumber mint with a ginger dressing. Yes, cucumbers make amazing noodles! Fresh, crispy, refreshing, juicy and with a zing from the ginger. (via Cucumber mint noodles with ginger dressing)
