This Watermelon Jelly Recipe is very simple and requires very little canning knowledge. (this is only my second time every canning anything.) This may not be a toast kin of jelly, But the uses for this jelly are endless. Salad dressing, on top of pancakes
Need to tinker with this. Tastes great, but it's SUPER icy-- couldn't get it creamy for anything. More full-fat coconut milk, less almond milk, and don't add extra watermelon juice (maybe leave the pulp in) would be my adjustments to try.
