Faux Chicken & Rice Low Carb!! Cauliflower rice and boiled chicken breast combined with homemade celery soup. Saute 2 Cups of diced celery, 1/8 C onion and 5 green onions in butter till tender and translucent. Add 2 Cups of Chicken broth and 1/2 cup of cream. Blend in blender, return to pan bring to a boil, add 1tsp of xantham gum. Then combine with chicken & cauliflower rice, cover with cheddar cheese.
